Easy Apple Cinnamon Muffins

These muffins are perfect. Not too sweet, but just it takes all of 10 minutes to make the batter.

2 cups (250g) all-purpose flour

1 cup (200g) brown sugar

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

2 eggs

1 1/4 cups (280g) plain greek yogurt

4 tbsp vegetable oil

1/4 cup (113g) unsweetened applesauce

5 oz (144g) diced, peeled apple (about 2 small apples)

Sparkling or granulated sugar for sprinkling on top

  1. Line or grease 16 muffin cups and set aside

  2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt and cinnamon

  3. In a separate, smaller bowl, whisk together the eggs, yogurt, apple sauce and oil

  4. Whisk the wet mixture into the dry

  5. Fold in the diced apple

  6. Spoon the muffin batter 3/4 of the way in the prepared cups and sprinkle the sparkling sugar on top

  7. Bake for 18 mins, until they spring back when lightly pressed

  8. Cool briefly in the tins before transferring to a wire rack
